Variation 1: (Original Sweet Cereal Bar)
Variation 2: (Sweet cereal bar with caramel sandwich layer): Caramel: Cereal Bar = 23:77
Process method
- Mix liquids, shortening, lecithin and flavour together and heat till homogenized.
- Mix powders (NUTRALYS® S85 plus N, salt, gum). Add to liquids and stir well.
- Roast NUTRALYS® TP70G, pumpkin seeds, chopped almonds, chopped salted peanuts in MIVE cube air oven (150°C for 15min).
- Stir in grains and cereals and mix into the hot syrup to obtain a homogenous preparation.
- Using Rondo sheeter, obtain cereal sheet of 0.8cm final thickness.
- Bake cereal sheet in MIVE cube stone oven (160°C for 15min) and cool to room temp.
- Spread a layer of caramel onto a piece of baking paper, obtain 0.2cm final thickness using Rondo sheeter. Keep chilled till ready for use.
- Cut cereal sheet into half and layer caramel coating, caramel forming a sandwich layer in between cereal sheet.
- Bake sandwiched bar in MIVE cube stone oven (150°C for 2min) and cool to room temperature.
- Cut into slices and vacuum seal package before storage.
