Process method
- Weigh Sugar, salt and 2 grams of sodium bicarbonate.
- Add water and pea syrup.
- Heat at low setting until all the sugar is dissolved and the mixture starts to boil.
- Add the butter.
- Keep cooking until the temperature reaches 270 F.
- Add the peanuts.
- Keep cooking until temperature reaches 310 F.
- Remove from heat and add the rest of the sodium bicarbonate.
- Mix and quickly spread over a tray with parchment paper.
- Let cool.
