Process method
- Blend powders (protein, lactose and GLUCIDEX® 19 D maltodextrin)
- Add powder mix in skimmed milk heated at 50°C and stir with a whisk for 1 minute
- Mix the preparation using a high shear mixer at 2500 RPM at 50°C during 30 minutes without foam formation
- Melt the lecithin in oil at 50°C
- After 30 minutes, add oils in the preparation under high shearing during 5 minutes at 5000 RPM
- Pasteurize at 73°C during 1min & downstream Homogenize at 200 bars (2 stages) at 75°C (using Powerpoint cooker)
- Evaporate (50% D.S.) & spray dry at 150°C
- Add GLUCIDEX® PREMIUM maltodextrin in the mix
