The idea
When developing the recipe of a beverage, some types of soluble fiber don't have resistance in the beverage, because of low resistance against heat treatment and long shelf life, such as a few months. Degradation of fiber content leads to spoiling of the value of the final product, which cannot follow the regulation of nutritional labeling of the product package.
How do we select the soluble fiber to use in order to maintain the product’s value until its expiration date? And how do we select the best soluble fiber which can improve production efficiency?
Work plan and trials
Test #1: In this case, the product developed is an acidic beverage.
We assessed the amount of fiber degraded during the heat treatment. Based on the analysis of fiber content by using the AOAC2001.03 method, we confirm that NUTRIOSE® soluble fiber shows a good stability during heat treatment at pH 3.0.
Then, to confirm the stability of the soluble fiber during storage, we stored the heat-treated sample at 25°C for 50 days. NUTRIOSE® showed significant superior stability compared to the other soluble fiber.
NUTRIOSE® soluble fiber maintains the nutritional value of the product over shelf life.
As the result, we can confirm that NUTRIOSE® is the preferred soluble fiber as it shows the best stability at acidic condition.
Test #2: In this case, the developed product is a neutral pH beverage.
We assessed the amount of fiber degraded during the heat treatment and storage by using AOAC2001.03 method.
NUTRIOSE® displayed superior stability compared to the soluble fiber [Market product].
NUTRIOSE® maintains the value of fiber in the product during the shelf life.
As the result, we can confirm that NUTRIOSE® is the preferred soluble fiber as it shows the best stability at neutral condition.
Results
Based on these results, we can conclude that NUTRIOSE® is the best soluble fiber for beverage applications as it displays an excellent stability at various pH conditions and heat treatment conditions.
