PROCESS
- Start heating and prepare phase A1: Blend the two gums and disperse in water under agitation with a propeller to create a vortex, until a homogeneous gel is obtained (approx. 5 min),
- Add phase A2 in phase A1 and mix under agitation until obtain homogeneous aspect (around 5 min),
- At 80 °C disperse Beauté by Roquette® ST 730 in phase A1+A2 and maintain agitation (minimum 2,000 rpm) to create a vortex for 15 min,
- Prepare phase B and heat phase B to 80 °C,
- Emulsify B in phase A and maintain strong agitation for 15 min at 80 °C,
- Cool down below 25 °C,
- Add successively phases C, D, E, F and G under agitation.
