Process method
- Blend powders (proteins, sugar, maltodextrin, nutriose and carrageenan),
- Add powder mix in water heated at 50°C and stir with a whisk for 1 minute,
- Mix the preparation (Silverson) at 50°C during 30 minutes without foam formation,
- Add vanilla flavor,
- Sterilize at 142°C during 5 sec (Power point cooker),
- Homogenize at 200 bars (2 stages) at 75°C (Powerpoint cooker, downstream process),
- Cool at approximately 20°C,
- Pack in bottle and store at 4°C.
