Process method
- Cook the LYCASIN® Maltitol syrup, Mannitol 60, GLUCIDEX® 2, vegetable fat and sucrose ester at 130oC under atmospheric pressure.
- On cooling, while beating, add flavor and blend (Mannitol 35, citric acid) for seeding at around 70oC.
- Beating for 5 minutes.
- Cool mass on slab.
- Pull mass for 2 minutes.
- Form and cut.
