Process method
- Blend powders (proteins, sugar, maltodextrin and carrageenan).
- Add powder mix in milk heated at 50°C and stir with a whisk during 1 minute.
- Mix the preparation (Silverson) at 50°C during 30 minutes without foam formation.
- Add vanilla flavor.
- Adjust the pH to 6.8-7 with NaOH at 30%.
- Sterilize at 142°C during 5 sec (Power point cooker).
- Homogenize at 200 bars (2 stages)/75°C (Power point cooker, downstream process).
- Cool at approximately 4°C.
- Pack in bottle and store at 4°C.
