Process method
- Warm the water around 45°C (113°F) and hydrate the pea protein during 15 min (2000rpm max).
- Mix all the other ingredients except the oil, with intense mixing, until complete dispersion and at least 15 min.
- Heat the oil to 60°C (140°F) and disperse the lecithin in it. Mix for 3 minutes.
- Add this oil + lecithin blend to the solution with a high-shear mixer (6000rpm for 5min).
- Sterilize the solution by UHT treatment: 142°C (289°F) – 5 sec at 20 L/h
- Homogenize the solution at 75°C (167°F) by using high-pressure homogenizer at 270 bars (1st stage) and 30 bars (2nd stage).
- Cool to 4°C (40°F) and bottle the beverage
