PROCESS METHOD(工艺流程)
- Dissolve pea protein in water, warm the water around 50℃ for 30min with stirring (1000rpm max)
- Mix maititol,resistance dextrin with gum and complete dispersion them in protein solution at least 15min
- Heat the oil and disperse sugar ester in ThermoMix for 3 min
- Add the oil phase and nut paste to the solution with a high-shear mixer(4000-6000rpm for 5-10 min)
- Homogenize the solution by using high-pressure homogenizer at 200Bar
- Sterilize the solution by UHT treatment with Tubular exchanger, 142℃,holding time 4S
- Aseptic filling.
