Process method
- Heat 50% of water 50°C (for protein hydration the temperature cannot be higher)
- Add WPC 550 mix for 20 minutes (NOT SO high shear because the foam formation)
- In the other 50% water disperse TABULOSE® SC611 for 10 minutes
- Add Carrageen and CMC mix for 3 minutes
- Add all the other ingredients mix for 5 minutes
