NUTRALYS® W wheat protein is a soluble protein (85 % protein) obtained by enzymatic hydrolysis of vital wheat gluten.
NUTRALYS® W wheat protein has a low viscosity. It preserves the product texture and does not interfere with dough rheology. NUTRALYS® W is an agglomerated powder with mild cereal taste, high dispersibility and suspensibility. It has been developed to provide an increased solubility at neutral pH.
NUTRALYS® W wheat protein has excellent digestibility with a PDCAAS (Protein Digestibility Corrected Amino Acid Score) of 22 (children 3-10 y.o.) to 30 (adults). It contains most of the essential amino acids;, lysine is the limiting factor. The association of cereals and legumes is of interest as:
