Roquette has developed a procedure enabling a reduction of the hard coating time without any change in the crunchiness.
(*) lycoat® process

The process involves the use of fine Maltitol Powder and Maltitol Syrup.
It requires less water to be evaporated than in the traditional
Hard Coating process. Consequently, it is much faster.

Crunchiness and Stability of the coating are the crucial key parameters
demanded by the market. It is thus important for confectioners to focus on these two main factors for success. Taste, sweetness and whiteness also play important roles.
